Yes — every brand is a local .kitcabin file you own. Kit Cabin never uploads them anywhere.
Does it work offline?
Fully. There's no account to sign into and nothing to sync.
Can I sync across Macs?
Point the library folder at iCloud Drive or Dropbox. Your brands go where your files already go.
What happens after the trial?
